SPRINKLE, MIX OR DASH
CARROT CAKE BALLS
WHAT YOU’LL NEED:
1 c rolled oats
½ c walnuts
½ c carrot finely grated (about one small carrot)
1 Tbs nature’s intent chia seeds
2 tsp fresh ginger finely grated
1 tsp vanilla extract
½ c shredded coconut for dusting
Remove the pits from the dates and soak them in hot water for several minutes. When the dates are softened, drain them and place in a food processor. Save the water
Add the other ingredients to the food processor and blend until mixture turns into a dough like consistency. Add 1 Tbs of the water you used to soak the dates in if the mixture is too dry.
With a small spoon scoop the mixture and roll into balls. Roll the balls in shredded coconut and place on the sheet.
Place in the refrigerator to harden for 15 minutes.
